the Director
Greetings and Happy Easter!
I hope that the many events of the past few weeks have
been full of grace and find you not exhausted but peaceful
and joy-filled in the light of the risen Lord! This
is what it's all about, isn't it? St. Paul wrote: "For
if Christ has not been raised... our faith is useless" (1
Cor. 15:14). What a great hope we have as we continue in
this Easter Season, celebrating Jesus Christ who is Risen... He
is Risen indeed!
With that hope alive in us, we said a sad "goodbye",
but a sure "see you again" to a dear friend and founding
Board member of MorningStar, Dave Marley, who passed into eternal
life on Tues., March 18th. Our love and prayers are
with Pauline and the entire Marley family. He
will be greatly missed. Please visit the following
tribute to Dave.

David A. Marley
1941-2008
As spoken
eloquently by Dave's daughter, Kim and son, Dave, Jr.
in their eulogies for their Dad: Dave was a man of integrity...
someone who you could learn from both his words and his
deeds, a man of conviction and commitment, a man with
a heart to serve... his family, friends, community, and
those in need. Dave gave so much of himself to so
many and was the receipient of the Archbishop Hurley Award
for extraordinary service, Catholic Health East Excellence
in Governance Award, and CLU/ChFC of the Year award.
In
recent years, MorningStar grabbed his interest and
dedication. Dave truly lived his faith and fully
believed in the power and importance of ongoing faith
formation in order to make a difference in the world.
He served as the first Vice President of MorningStar's
Board of Directors and was very instrumental in establishing
MorningStar as a Renewal Center for the Archdiocese of
Miami. He deeply touched and inspired us all
and we thank God for the gift of his life.
A memorial fund in Dave's honor has been established
and through the generosity of some special donors, there
will be a fountain in Dave's name on the grounds of MorningStar.

Extend the Light
Capital Campaign Update

- Phase I construction/re-modeling
has begun, initiating the renovation and remodeling MorningStar!
Thanks be to God for the many generous people who contributed
to the over $350,000 raised for this phase work.
- Complete make-over
and expansion of the dorms to begin this month and be completed
(hopefully!) by the end of the summer.
- Dorm expansion
will increase our overnight capacity to 80 beds.
- We are still actively
raising funds and accepting contributions for new sheets, bedspreads,
and a new commerical washer and dryer. Visit our Wish

Chef Ramzi's Recipe Box
Hummus
Hummus
is one of the more popular Middle Eastern dips.
Served with fresh or toasted pita, hummus makes for
a great snack or appetizer.
INGREDIENTS:
- 1 (16 oz) can of chickpeas or garbanzo
beans
- 1/4 cup liquid from can of chickpeas
- 3-5 Tbsp. lemon juice (according
to taste)
- 1 1/2 Tbsp. of tahini
- 2 cloves garlic, crushed
- 1/2 tsp. salt
- 2 Tbsp. olive oil
PREPARATION:
Drain
chickpeas and set aside liquid from can. Combine
remaining ingredients in blender or food processor.
Add 1/4 cup of liquid from chickpeas.
Blend for 3-5 minutes on low until thoroughly mixed
and smooth. Place in serving bowl and create
a shallow well in the center of the hummus.
Add a small amount (1-2 Tbsp.) of olive oil in the
well. Garnish with parsley (optional).
Serve immediately with fresh, warm or toasted pita
bread or cover and refrigerate (up to 3 days or kept
in freezer for up to one month).

Dinner at MorningStar
No cooking, no clean-up, only good food and fellowship allowed! Come and enjoy dinner out at MorningStar (we hope to make this a recurring event!). Fee: $10 per adult, $5 per child (10 and under). Thurs., May 1 - 5:30 - 7:00 pm. Open Seating during that time, but RESERVATIONS ARE REQUIRED TO ATTEND.
Missionaries in our Midst: a focus on missions – The month of May we designate to learning and connecting to the larger body of Christ throughout the world through the eyes and experiences of missionaries. A look into life in China, Africa, the Holy Land, and missions right here in Miami. Evening presentations will include simple themed dinner and presentation. Fee: $15 per session / $50 for all four.
